Abstract:
The study of emulsions stability, relating to the chemico-physical properties of corresponding liquid-liquid interfaces, was identified as an important application field. The links between the Physical Chemistry of droplets interfaces to the liquid films and to the collective properties of an emulsion are only qualitative, therefore the criteria used in the industry are mainly empirical. The FASES project aims at filling this gap, which is an important limitation in emulsion science and for the development of further applications.
